Iron Skillet Berry Cobbler from Table for Seven

Ingredients Needed:

  • Mixed berries
  • Brown sugar
  • Orange juice
  • Vanilla
  • Cornstarch + Water
  • Flour
  • White sugar
  • Baking powder + Salt
  • Butter
  • Whipping cream ( or whole milk)
  • Coarse sugar, optional

Should I Use Fresh or Frozen Fruit?

You can use either! If you are using frozen fruit, you may simply need to simmer the berries a smidgen longer.

Another Note About the Berries: You will need 6 cups in total. Feel free to use any combination that you wish. Ours is raspberries and blackberries, but, go with your favorite.

Do I Have to Use An Iron Skillet?

No. If you don’t have an iron skillet, any oven safe skillet will work. Stick with a 9-10 inch in size.

Ingredients
  

  • 6 cups fresh or frozen mixed berries I used raspberries and blackberries
  • 1 cup brown sugar
  • ¼ cup orange juice
  • 1 tablespoon vanilla
  • ¼ cup cornstarch
  • 3 tablespoons water
  • 1 ½ cup flour
  • ¼ cup white sugar
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 6 tablespoons butter cold and cut into small pieces
  • ½ cup whipping cream or whole milk
  • 1 tablespoon sanding sugar optional

Instructions
 

  • Preheat oven to 375 degrees.
  • In a 9-10 inch iron skillet ( or any oven proof skillet), add berries, brown sugar, orange juice and vanilla.
  • Mix to combine and under medium heat, simmer mixture for approx 8-10 minutes. Until it is hot and bubbly.
  • In a small bowl, whisk together cornstarch and water until smooth. Stir into berry mixture and continue to cook until thickened. About another 2-3 minutes. Remove from heat.
  • In a mixing bowl, whisk together flour, white sugar, baking powder and salt. Add in butter piece and mix with pastry cutter until crumbly.
  • Add in whipping cream and mix until dough forms.
  • Tear dough into pieces and arrange on top of berries. Sprinkle dough with sanding sugar ( or regular white sugar ).
  • Bake for 20-30 minutes or until lightly browned.
