We love muffins for breakfast or for a snack at my house. They are easy to make, portable and easy to freeze for future meals.

These Chocolate Peanut Butter Oatmeal Muffins are one of our favorites. They are packed with chocolate, peanut butter, chocolate chips and oatmeal. An awesome flavor combination that are a little sweet with a little healthy!

A delicious muffin for breakfast, brunch or a snack.

Cook Time 20 minutes
Total Time 1 hour

Ingredients

  • 1-3/4 cup boiling water
  • 3/4 cup rolled oats
  • 3 TBSP cocoa powder
  • 3 TBSP canola oil
  • 3/4 cup sugar
  • 1/2 cup cream peanut butter
  • 1 egg
  • 1 tsp vanilla
  • 1-3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips

Instructions

  1. In a mixing bowl, combine cocoa, water and oats. Let sit for 20 minutes
  2. Preheat oven to 350 degrees. Spray cupcake pan with liners or spray with non stick cooking spray.
  3. After 20 minutes is complete, add sugar to oat mixture until well combined. Add, oil, egg ,vanilla and peanut butter. Combine well.
  4. In a separate bowl, whisk flour,baking powder and baking soda. Add flour mixture slowly into wet mixture until combined well.
  5. Fold in chocolate chips.
  6. Spoon batter into prepared pan.
  7. Bake 20-25 minutes or until toothpick comes out clean.

I just made these muffins today and they were delicious, I actually got 16 out of the mixture, will definitely make again
