Yippee! It’s time for chicken.

It’s been forever and a day since I shared a chicken recipe here on the site. Of course, we eat it all-the-time, but, I haven’t had a really “wow! this is really great chicken! I should blog about it!” dish in a while.

Don’t worry, today, I do. Yes, it is exciting.

Lemon Garlic Honey Chicken (short!) Ingredients List:

  • Chicken (boneless) thighs
  • Lemons
  • Garlic
  • Honey
  • Soy sauce
  • Canola oil
  • Salt + Pepper + Oregano

Make your chicken: First, make your sauce. Set it aside.

Next, add some oil and garlic to your skillet and let it get hot. Place your chicken in the skillet and let it go to work. You want to sear the chicken for 4-5 minutes on each side.

Remove the chicken and add the sauce to the pan. Loosen any bits of chicken/garlic off the pan and mix it all together. A wooden spoon works great for this. If you want even more lemon flavor, add a few slices of fresh lemons to the skillet with the sauce.

Add the chicken back into the pan with the sauce and coat the chicken. Cook it another 5 minutes or so..just to get everything mixed well. Then, eat!

A few things to note:

  • The internal temperature of your chicken should be 165 degrees when done.
  • Chicken breasts should also work for this dish. But, your cooking time will differ. Plus, the amounts for your sauce may be increased, depending on the size of the breasts.
  • This chicken goes great with side of brown rice or egg noodles.

Ingredients

  • 1.75 lbs boneless, skinless chicken thighs
  • juice from 2 lemons ( 1/2 cup), plus, additional sliced lemon for skillet
  • 1 tsp minced garlic, plus, additional for pan
  • 1/4 cup canola oil, plus, additional for pan
  • 1 TBSP honey
  • 1 TBSP low sodium soy sauce
  • 1/2 tsp dried oregano
  • salt/pepper, to taste preference

Instructions

  1. In a bowl, whisk together lemon juice, minced garlic, canola oil, honey, soy sauce and dried oregano. Set aside.
  2. Add approx 1-2 TBSP of canola oil and a sprinkle of minced garlic to a large skillet.
  3. Salt and pepper chicken thighs on both sides.
  4. Once the pan is hot, add the chicken thighs and sear them for 4-5 minutes on each side.
  5. Remove chicken from pan and place on a plate.
  6. Add sauce into pan and mix with a wooden spoon, scrape up together any bits of garlic/chicken/oil that have been left in the pan. Place the chicken back into the pan and coat it well in the sauce. If desired, add a few slices of lemon with the sauce, for extra lemon flavor.
  7. Cook an additional 5 minutes or until chicken is cook thoroughly.
  8. Serve with rice or egg noodles.

I encourage you to use a healthier oil than canola in your recipes.....that is very unhealthy.

Hi Jan- thanks for the info. Honestly, I believe in moderation when it comes to all cooking/baking. The amount of in this recipe is not very much and if someone trying this recipe wants to switch the oil to a different type (olive/sunflower, etc) , they are welcome to do that. Have a lovely day.
