Ingredients
  

  • 1.75 pounds chicken thighs boneless and skinless
  • juice from 2 lemons 1/2 cup, plus, additional sliced lemon for skillet
  • 1 teaspoon minced garlic plus, additional for pan
  • ¼ cup canola oil plus, additional for pan
  • 1 tablespoon honey
  • 1 tablespoon low sodium soy sauce
  • ½ teaspoon dried oregano
  • salt/pepper to taste preference

Instructions
 

  • In a bowl, whisk together lemon juice, minced garlic, canola oil, honey, soy sauce and dried oregano. Set aside.
  • Add approx 1-2 TBSP of canola oil and a sprinkle of minced garlic to a large skillet.
  • Salt and pepper chicken thighs on both sides.
  • Once the pan is hot, add the chicken thighs and sear them for 4-5 minutes on each side.
  • Remove chicken from pan and place on a plate.
  • Add sauce into pan and mix with a wooden spoon, scrape up together any bits of garlic/chicken/oil that have been left in the pan. Place the chicken back into the pan and coat it well in the sauce. If desired, add a few slices of lemon with the sauce, for extra lemon flavor.
  • Cook an additional 5 minutes or until chicken is cook thoroughly.
  • Serve with rice or egg noodles.
