If you haven’t noticed, I’m borderline obsessed with cake mixes lately.

Today’s cake mix recipe is another easy peasy one, guys.  Banana bread.  Mm..or is it banana cake? It’s made with a cake mix, but, baked in a loaf pan.  So, does, that make it bread or just cake baked in a bread pan?   A conundrum if there ever was one.

Regardless of what you want to call it.  It’s divine and you need just 3 ingredients for it.  Get yourself a cake mix, a banana and some eggs and boom! Banana bread. Life is good.

You don’t necessarily have to use a yellow or white cake mix either.  Give it a try with chocolate (on my to do list) and there is also sugar free and gluten free cake mixes out there.  I haven’ given them a try, but, it could be a great options for some.

Prep Time 15 minutes
Cook Time 40 minutes
Total Time 55 minutes

Ingredients

  • 1 box- yellow or white cake mix
  • 2 eggs
  • 3 ripe bananas, smashed

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 in loaf pan.
  2. In a mixing bowl, combine dry cake mix, eggs and smashed bananas until combined.Pour into prepared pan.
  3. Bake for 35-40 minutes or until knife inserted comes our clean.Let bread cool for 5-10 minutes before removing from pan.

Last night I used your basic but terrific cake mix banana bread recipe using Aldi's liveGfree gluten free yellow cake mix with some slight variation as a test. I've tried many different recipes using GF cake mixes and flour combinations in the past, but none compare to how well this bread came out. The box recipe included vanilla extract and milk, which I omitted. I used 2 tablespoons of softened butter instead of their stick of butter, doing so in fear it might come out dry. I used the 4 small- medium ripened bananas from a bunch I'd been holding onto to make the bread before I tried your recipe, hoping it would match the 3 mentioned in your recipe. I baked the bread until knife came out clean, about 53 mins. Your recipe, but switching to the Aldi's GF boxed cake mix, was by far the best, most tastiest, perfect banana bread I've ever had. And seeing how little butter I'd used, I've concluded that I don't need to add any,nir substitute oil, which my doctor's will be very happy about. There's really something to be said about keeping it simple! Thanks so much for this recipe. It's a keeper

Hi Peggy- I think you may of clicked the "scale" option on the recipe card. If you click the "1x" square, it will give the correct ingredients for making just one loaf of the bread:

1 box- yellow or white cake mix 2 eggs 3 ripe bananas, smashed

Sounds good and easy but I think I can reduce the sugar more and still have the flavor in it. And can this be made into 2 loafs instead too?
