Meatloaf: For Your Crock Pot and Instant Pot

Make the classic comfort food right in your instant pot ( pressure cooker) or crock pot ( slow cooker). It’s easy, delicious and only requires your oven to be on for less than 10 minutes.

I’ve said it before and I’ll say it again…meatloaf can be a pretty lackluster meal to serve for dinner.

However, it’s is pretty tasty, won’t cost a fortune to feed people and can be easily adaptable to your own taste.

Way back on 2015, I shared how to make a meatloaf in your crock pot. Today, I’m sharing that recipe again, with the additional to making it in your instant pot!

The Ingredients List:

  • Ground turkey
  • Egg
  • Bread crumbs
  • Onion
  • Ketchup
  • Additional for topping: Brown sugar & Dijon mustard

Can I use ground beef? Yes! We like ground turkey for our meatloaf, but, feel free to use ground beef or a combination of your favorite meatloaf mix.

Can I use my own meatloaf recipe? Again, yes. My meatloaf is a pretty basic and not very flashy. The cooking method/time shouldn’t change with a different recipe, unless you use more/less meat.

Crock Pot: Remember to line your crock pot with foil (and spray with non stick cooking spray!) or use crock pot liners. Much easier clean up.

Broiling: The first broiling time will be 5 minutes. The second is only going to be 2-3 minutes to caramelize the topping. Keep a close eye on it to prevent burning.

Prep Time 15 minutes
Cook Time 30 minutes
Additional Time 10 minutes
Total Time 55 minutes

Ingredients

  • 1 lb ground turkey
  • 1 egg
  • 1/4 onion, chopped
  • 1/4-1/2 cup bread crumbs (more or less due to your preference in consistency of loaf)
  • 1/4 cup ketchup
  • FOR TOPPING:
  • 1/4 cup ketchup
  • 1 TBSP brown sugar
  • 1 tsp Dijon mustard

Instructions

FOR CROCK POT:

    1. Line crock pot with foil and spray with non stick cooking spray or line with crock pot liners
    2. In a mixing bowl,, mix all ingredients, excluding the ingredients for the topping.
    3. Form meat into loaf and place in crock pot.
    4. Cover and cook on high for 4-5 hours or on low for 6-7 hours.
    5. In a small bowl, whisk together ingredients for topping.
    6. Remove loaf from pot and place on a heat safe baking pan. Place under a preheated broiler for 5 minutes. Remove, then, spread topping on top and place back under broiler for just two minutes to caramelize.
    7. Let meatloaf rest for 8-10 minutes before slicing.

    FOR INSTANT POT:

    1. Pour 1/2 cup of water into instant pot and place the trivet inside the pot, with the handles up.
    2. In a mixing bowl,mix all ingredients, excluding the ingredients for the topping. Form meat into loaf and place on a small piece of foil. For easy removal, spray the oil with non stick cooking spray. Wrap the foil around the loaf, to create a pan. Place it on top of the trivet.
    3. Cover with lid and cook on high pressure for 30 minutes. Do a natural release.
    4. Remove loaf from pot and place on a heat safe baking pan. Place under a preheated broiler for 5 minutes. Remove, then, spread topping on top and place back under broiler for just two minutes to caramelize.
    5. Let meatloaf rest for 8-10 minutes before slicing.

Erin, I'm so pleased to find another way to use my Instant Pot. I was rather late to the Instant Pot party and am still discovering ways to use it! I, too, like using ground turkey for many things. #FullPlateThursday
