Your Ingredients List:
- Cream cheese (make sure it’s softened!)
- Whipped topping (ex: Cool Whip/ TruWhip)
- Sugar
- Oreo cookies (if you want springtime version)
- Peeps marshmallow bunnies or chicks
- Chocolate chips
- Green sprinkles
Supplies You Will Need:
- 12 count muffin pan + liners
- Electric mixer + mixing bowl
- Microwave safe bowl + spoon
- Flat rimmed baking sheet + parchment paper

Recipe Notes:
- Don’t forget to freeze your Peeps before dipping them in the melted chocolate. This will make the process much easier and keep them from melting.
- Be sure to refrigerate your cheesecakes for at least 1 hour before serving. If desired, you can also refrigerate them over night/the day before serving.
- You can use semi sweet or milk chocolate chips for these. Both will work.

Peeps Mini Cheesecakes

Perfect for spring and your Easter holiday! No bake mini cheesecakes with an Oreo cookie base, and they're topped with a sweet marshmallow Peep candies that are dipped in chocolate. #CuteDessertOverload
Ingredients
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 8 oz whipped topping (ex: Cool Whip/Tru Whip)
- 12 Oreo Cookies
- green sprinkles
- 12 Peeps marshmallow bunnies
- 1 cup chocolate chips
Instructions
- Lay Peeps on flat rimmed baking sheet and place in freezer.
- Place cupcake liners into a 12 count cupcake pan. Place 1 Oreo cookie in the bottom of the pan.
- Beat cream cheese, whipped topping and sugar until well combined
- Spoon cream cheese mixture evenly on top of each cookie.
- Refrigerator for at least an hour before serving.
- In a microwave safe bowl, melt chocolate chips until smooth. Microwave at 30 seconds intervals to avoid burning.
- One at a time, dip the bottom of the frozen Peeps into the melted chocolate. Then, place on a parchment lined baking sheet to set. Be sure they are set before placing on top of your cheesecakes.
- Sprinkle tops of cheesecakes with green sprinkles, then, place a chocolate dipped Peep on top before serving.
