  • Potatoes. When I make mashed potatoes, I like to use russet or Idaho potatoes since these varieties yield the creamiest results.
  • Sour Cream. You may use either light or regular sour cream, however, the smoothness of the mashed potatoes will be significantly improved if you use regular sour cream.
  • Green Onions. They are also known as scallions. Although they are not required, I highly recommend adding them to the cheesecake factory mashed potatoes because of their excellent flavor.
  • Horseradish. Although fresh horseradish is available to purchase, I most often get it in jar form.

Rooted in the same family as broccoli and wasabi, horseradish is an interesting culinary ingredient in its own right. Horseradish is mostly picked for its roots, although the leaves are sometimes cooked as well.

When freshly dug up from the ground, horseradish doesn’t look like much. Sinigrin and myrosin, two components of horseradish, combine when the root is chopped or scraped to produce a pungent odor.

Horseradish’s divisive nature can be traced back to its pungent odor. Many individuals become addicted to the root because of its fiery flavor without any residual pain. Eating horseradish will cause your mouth to tingle with its pungent flavor, but the sensation will go off quickly. I guess that’s why the flavor is so sought after.

Which Potatoes Are Best For This Mashed Potatoes Recipe?

You should choose potatoes that have a good amount of starch in them. For this Cheesecake Factory Mashed Potatoes recipe, we used russet potatoes, but Idaho and Yukon Gold potatoes are other excellent choices.

It is best to avoid red-skinned potatoes and other types with comparable characteristics since they will take significantly more time to break down and are more likely to produce gluey potatoes.

Instant Pot Cooking Instructions

  • Peel and wash the four potatoes. Cut the potatoes into eights to get equal-sized chunks. Fill the instant pot with 2 cups of water and add your potatoes. Cover the instant pot and set it to manual or high for 6 minutes. When the cooking cycle is over, do a rapid release. Drain any residual water before proceeding with the assembly instructions.

Cooking Instructions for the Stovetop

  • Boil the potatoes in a large saucepan for 10-12 minutes, or until cooked. You should be able to easily pierce them with a fork. Drain the potatoes and return them to the saucepan. Then, proceed with the assembly instructions.

Assembly instructions

  • Mash with a potato masher 2 tablespoons melted butter and 1/4 cup milk until smooth and creamy, adding additional milk as needed.
  • Mix in the other ingredients (1/4 cup sour cream, 1/3 teaspoon salt, powdered pepper to taste, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1 tablespoon horseradish, 3 chopped green onions) with a spoon until thoroughly blended, adding additional horseradish if desired.
