Give your mashed potatoes a twist! Creamy mashed potatoes filled with flavorful taco meat, cheddar cheese and onion.

Ingredients
  

  • 1 pound ground beef or turkey
  • 1 small onion chopped
  • 1 package dry taco mix
  • 1 cup shredded Colby/jack cheese divided
  • 24 ounces mashed potatoes they can be homemade or store bought
  • 1 egg

Instructions
 

  • Preheat oven to 375 degrees. Grease an 8-9 baking dish.
  • In a bowl, mix together potatoes, egg and 1/2 cup of cheese. Set aside.
  • In a large skillet, brown ground beef with chopped onion until no longer pink. Drain if necessary.
  • Return to pan and stir in taco seasoning.
  • Spoon meat on to bottom of baking dish.
  • Spread potato mixture on top of taco meat.
  • Sprinkle remaining 1/2 cup of cheese on top.
  • Bake for 30 minutes or until heated through.
