Give your mashed potatoes a twist! Creamy mashed potatoes filled with flavorful taco meat, cheddar cheese and onion.

- 1 pound ground beef or turkey
- 1 small onion chopped
- 1 package dry taco mix
- 1 cup shredded Colby/jack cheese divided
- 24 ounces mashed potatoes they can be homemade or store bought
- 1 egg
Preheat oven to 375 degrees. Grease an 8-9 baking dish.
In a bowl, mix together potatoes, egg and 1/2 cup of cheese. Set aside.
In a large skillet, brown ground beef with chopped onion until no longer pink. Drain if necessary.
Return to pan and stir in taco seasoning.
Spoon meat on to bottom of baking dish.
Spread potato mixture on top of taco meat.
Sprinkle remaining 1/2 cup of cheese on top.
Bake for 30 minutes or until heated through.
