Pork Tenderloin Sheet Pan Dinner- Tender, flavorful pork baked right along side with tiny potatoes and fresh green beans. Dinner in one pan and under an hour!

Ingredients
  

  • 1.25 pounds boneless pork tenderloin trimmed
  • ½ pound small baby potatoes
  • 12 ounces fresh green beans
  • 2 tablespoons olive oil
  • 1-2 tablespoons brown sugar
  • 3 tablespoons melted butter
  • chopped chives
  • garlic powder to taste preference
  • onion powder to taste preference
  • salt/pepper to taste preference

Instructions
 

  • Preheat oven to 450 degrees. Line a large flat rimmed baking sheet with foil or parchment paper. If using foil, spray it lightly with non stick cooking spray.
  • In a bowl, toss green beans and potatoes with oil. Spread beans evenly in the middles of the baking sheet. Then, spread potatoes evenly on the sides of the beans. Sprinkle tops of both with garlic powder, onion powder and salt/pepper.
  • Place pork tenderloin on top of green beans and rub the top of the tenderloin with brown sugar, salt and pepper.
  • Bake for 20-25 minutes or until the internal temperature of pork is at least 140 degrees and potatoes are tender.
  • Remove from oven and brush top with pork with melted butter and sprinkle with chopped chives.
  • Let pork rest for 5-8 minutes before slicing.
