Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup cold unsalted butter
  • 1 cup buttermilk
  • ½ cup 7-up

Instructions
 

  • Preheat the oven to 425°F.
  • In a large mixing basin, combine the all-purpose flour, baking powder, and salt. Using a pastry cutter or two knives, cut in the butter until the mixture resembles coarse crumbs.
  • Combine the buttermilk and 7-up in a separate bowl. Stir the wet ingredients into the dry ingredients until just mixed. Avoid overmixing.
  • Knead the dough a few times on a lightly floured surface until it comes together. Make a 1-inch thick round out of the dough. Cut out the biscuits with a biscuit cutter or a lightly floured drinking glass.
  • Bake the biscuits for 12-15 minutes, or until golden brown, on an ungreased baking sheet.

Notes

  • Bacon Cheddar 7-Up Biscuits. To prepare this variant, you’ll need to add shredded cheddar cheese and diced cooked bacon to the standard recipe. The smokiness of the bacon and the bite of the cheddar will make these biscuits one-of-a-kind. The flakiness of the biscuits can be improved by using bacon fat.
  • Green Chile 7-Up Biscuits. Throw in a can of chopped green chiles for a southwestern spin on a classic dish. Green chiles will give the biscuits a mild heat and create a tasty textural contrast with the otherwise airy biscuits.
