Ingredients
  

  • 4 cups pineapple chopped
  • 2 tablespoons pectin
  • ½ cup water
  • 2 cups sugar
  • 2 tablespoons lemon juice

Instructions
 

  • Combine the pineapple, pectin, and water in a large saucepan. Stir the mixture over medium-high heat until it reaches a simmer.
  • Stir in the sugar and lemon juice until the sugar dissolves.
  • Cook, stirring regularly until the mixture reaches a full rolling boil.
  • Remove the mixture from the heat after 1 minute.
  • Pour the jelly into the prepared jars or containers, cover, and refrigerate until totally cold.
