Mini Cinnamon Sugar Applesauce Muffins

- ½ cup 1 stick butter, softened
- ½ cup sugar
- 2 eggs
- ¾ cup unsweetened applesauce
- 1 ¾ cup Flour
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon ground cinnamon
FOR TOPPING:
- ½ cup 1 stick butter, melted
- ½ cup sugar
- 2 teaspoons ground cinnamon
Preheat oven to 350 degrees. Grease a 24 count mini muffin pan or line with cupcake liners.
In a bowl, whisk together flour, baking soda, baking powder, salt and ground cinnamon. Set aside.
In a mixing bowl, beat butter with sugar until fluffy. Then, add in eggs, vanilla and applesauce. Mix until combined.
Gradually, add flour mixture in and mix until just combined.
Spoon batter into mini muffin pan evenly and bake for 12- 15 minutes.
When muffins are cooled, dip top of each one in melted butter, then, in sugar/ground cinnamon mixture.
