Ingredients
  

  • 4 mackerel fillets skin removed and flaked
  • 1 cup breadcrumbs
  • ½ cup diced onions
  • 2 cloves minced garlic
  • 2 eggs beaten
  • ¼ cup flour
  • 1 teaspoon Old Bay Seasoning
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions
 

  • In a large bowl, mix together the mackerel, breadcrumbs, onions, garlic, eggs, flour, Old Bay Seasoning, lemon juice, salt, and pepper.
  • Form the mixture into 4 patties.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the patties to the skillet and cook for 5-7 minutes on each side or until they are golden brown and crispy.
  • Serve the patties hot with a lemon wedge or your favorite dipping sauce.

Notes

  • Spicy Mackerel Patties. Add some cayenne pepper or red pepper flakes for some heat. Dipping sauces made of chilled, creamy yogurt or sour cream are recommended to counteract the spicy flavor.
  • Herbed Mackerel Patties. For a bright and herbal taste, toss in some chopped fresh herbs like parsley, dill, or cilantro. Add a splash of lemon juice for extra tang when serving.
  • Cheesy Mackerel Patties. Add more grated parmesan cheese for a savory, creamy texture. Garlicky butter or rich alfredo sauce are great accompaniments.
  • Panko Crusted Mackerel Patties. Panko breadcrumbs provide a crispy coating for the patties. Complement with tartar sauce or a hot cocktail sauce.
