Gordon Ramsay’s Mushy Peas combine buttery richness with a zesty kick of lemon. In just 15 minutes, sauté garlic, simmer frozen peas, season, and finish with lemon for a creamy delight. Perfect for four servings.
Melt the butter in a saucepan over medium-low heat.
Cut up the garlic and cook it for one minute, until it smells good.
Include the frozen peas after that. Warm up until soft.
Sprinkle some salt and pepper on top of everything.
Blend the cooked peas and cream together in a food processor. It’s still going to be very thick.
Puree the mixture after adding the lemon juice.
If you want more salt and pepper, taste it and add it.
Notes
For maximum flavor, use fresh peas when in season; otherwise, frozen peas will do.
Avoid cooking the peas for too long, or they may turn mushy and lose their bright green color.
Increase or decrease the garlic according to how much you like the flavor. The flavor of garlic can be mellowed by roasting it.
Pulse the food processor while adding the cream and peas to get the right consistency. Be careful not to over-blend, since the peas should still have some texture.
