1 cup dry red wine or water 1 cup chicken stock or reduced-sodium canned broth ½ teaspoon salt Garlic-Roasted Leg of Lamb
Put red wine into the pan that the lamb was cooked in.
Scrub the bottom of the pan to get rid of any burnt bits.
Turn on the heat and add the stock and salt.
Stir and cook until the liquid is almost gone, which should take about 10 minutes. As needed, skim the fat off the top.
Add the sauce to a gravy boat after straining it, and serve it hot with lamb slices.
Use a good-quality dry red wine for enhanced flavor.
Ensure the pan is deglazed thoroughly to capture all the rich flavors.
Adjust salt according to taste preference.
Strain the sauce for a smooth, refined texture.
