Gordon Ramsay’s Chilli Con Carne is a hearty and flavorful dish that combines ground meat, beans, and spices. It takes about 1 hour to prepare and cook.
1red chillideseeded or leave half seeds for extra spice
2sprigs thymeleaves picked and roughly chopped
olive oil for frying
1poundquality beef mince
1teaspoonground cumin
2teaspoonssweet paprika
1teaspoondried oregano
3fresh tomatoesroughly chopped
1poundcanned chopped tomatoes
2tablespoonstomato puree
1cupchicken or beef stock
3tablespoonstomato puree
1stick cinnamon
1bay leaf
1poundkidney beansdrained and rinsed
salt and pepper to taste
Instructions
Take a big saucepan and heat 2 tablespoons of oil. Add the onion, garlic, chili, and thyme.
At the same time, brown the meat in a different pan with a little oil over medium-low heat.
Add the dried spices to the onions, cook them until they start to smell good. Then add the beef and mix it well. Put in the canned and raw tomatoes and let them cook down for about 5 minutes.
Add the stock and tomato puree, bay leaf and cinnamon stick, bring it to a boil and then leave to cook on low.
When the sauce starts to get thicker, add the kidney beans. Let them cook for another 5 to 10 minutes so they can soak up the flavors. Season with salt and pepper.
Notes
Onion and Garlic: Make sure to finely chop for a smoother texture.
Spices: Use fresh spices like cumin and paprika for better flavor.
Tomatoes: Using both fresh and canned tomatoes adds depth to the sauce.
Meat Browning: Brown the meat separately for a richer flavor.
Simmer Time: Let the sauce simmer to allow the flavors to meld together.
