Ingredients

  • 5 bone in chicken thigh fillets peel skin off
  • 1 onion chopped (brown, white or yellow)
  • 2 cloves garlic minced
  • 2 tablespoons butter or olive oil
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth/stock
  • 1 ¼ cups hot water

Chicken Rub:

  • 1 teaspoon paprika powder
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • black pepper

Optional Garnish:

  • oil spray
  • fresh thyme leaves or finely chopped parsley

Instructions

  • Heat oven to 350 degrees Fahrenheit. Get the oven ready.
  • Arrange the garlic and onion in a baking dish (about 10 x 15″) and dot the center with butter. Cook for 15 minutes, stirring after 12 minutes to prevent overbrowning.
  • In the meantime, combine the Chicken Rub. Evenly coat the chicken with the seasoning.
  • Take the baking pan out of the oven. Combine with the rice.
  • Top rice with chicken. Next, cover the chicken with a mixture of chicken broth and water.
  • Place foil over the top and bake for half an hour. After 20 minutes of baking, take the foil off and spray the chicken with oil (optional, but will give it a better finish).
  • After 5 minutes, take the chicken out and fluff the rice. Serve with a sprinkle of parsley or thyme for garnish, and savor!

Notes

  • Ensure the chicken is well-coated with the seasoning for flavor.
  • Stir the onions and garlic during baking to prevent overbrowning.
  • Use a reliable meat thermometer to check if chicken is cooked through.
  • Experiment with different herbs and spices for a personalized touch.
