Place pork in pot. In a bowl, whisk together hoisen sauce, soy sauce, garlic, ginger and honey. Pour over pork
Cover and cook on high for 3 1/2 hours or on low for 5 1/2 hours.
Remove pork from pot. Whisk together corn starch and about a tablespoon of liquid from the crock pot until smooth. Pour back into pot and mix with the remaining liquid.
Cut or shred pork and return to crock pot. Mix it with the sauce. Remove lid from crock pot and cook an additional 30 minutes. or until cooked completely.
