Crock Pot Broccoli and Cheese Casserole

- 6 cups chopped broccoli if you are using frozen, let is thaw slightly
- 1 cup shredded sharp cheddar cheese divided
- 12 ounces cream of chicken soup
- ½ sleeve Ritz crackers
- 3 tablespoons butter cut into pieces
Spray crock pot with non stick cooking spray or line with liners.
In a large bowl, mix together broccoli, cream of chicken soup, and 1/2 cup of cheddar cheese.
Pour into prepared pot.
Crush crackers on top of broccoli mixture and top with butter.
Cover and cook on low for 2 hours.
For the last 1/2 hour of cooking, top with remaining 1/2 cup of cheese.
If desired, top with more crushed crackers before serving.
