Light as air Cinnamon Sugar Popovers are a sweet treat! Made with a just a few simple ingredients, they are great for breakfast or a snack. They are best eaten warm topped with melted butter and cinnamon sugar.
Preheat oven to 450 degrees. Grease a muffin pan or popover pan.
In a bowl, whisk together eggs and milk until foamy. Then, add in vanilla.
Add in flour, salt and 1 TBSP of sugar. Whisk until just combined and moist. Don't over mix!
Fill the muffin pan or popover pan with batter. Approx 3/4 way full.
Bake for 20 minutes at 450 degrees. Then, reduced oven temperature to 350 degrees and bake for 15 minutes or until brown and dry to touch.
Immediately and carefully, remove popovers from pan.
In a small bowl, mix together 1/4 cup sugar and ground cinnamon. Brush tops of warm popovers with melted butter, then, sprinkle with cinnamon/sugar mixture.

If you use a muffin pan, you will get more (and smaller) popovers, than, if you use a popover pan. If you use a popover pan, you will get approx 6 larger popovers.
