Chocolate Chip Cookie Muffins

- ¼ cup butter softened
- ¼ cup brown sugar
- ½ cup low cal sweetener
- 2 eggs
- ¾ cup milk
- 1 teaspoon vanilla
- 1 cup white flour
- 1 cup wheat flour if you don’t have any available, 2 cups regular flour will work fine
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 5 tablespoons mini chocolate chips
Preheat oven to 375 degrees. Grease 12 count muffin pan of line with liners.
In a mixing bowl, whisk together flours, baking powder and baking soda. Set aside.
In another bowl, mix butter, sugar and sweetener until creamy. Add in eggs. Then, add in vanilla and milk. Mix until well combined.
Slowly add dry mixture into wet ingredients. Beat until combined.
Fold in chocolate chips.
Pour evenly into prepared muffin pan.
Bake for 15 minutes or until knife inserted comes out clean.
Cool for about 5 minutes before removing from pan.
- This recipe calls for no-calorie sweetener, I used Truvia. You can use whatever type you wish or you can use regular sugar, just adjust accordingly.
