Chewy Baked Granola Bars

Ingredients
  

  • 4 ½ cups rolled oats
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • cup coconut oil melted, then, cooled
  • ¾ cup honey
  • cup packed brown sugar
  • 1 egg white
  • ½ cup chopped mixed nuts or whatever kind you prefer
  • 1 ¼ cups mini chocolate chips divided ( or your favorite dried fruit or baking chips)

Instructions
 

  • Preheat oven to 325 degrees. Line a 9 x 13 baking dish with foil. Lightly spray foil with non stick cooking spray.
  • In a large mixing bowl combine the oats, flour, brown sugar and baking soda.
  • Pour in honey, coconut oil, egg white and vanilla and coat oat mixture completely. Stir in 1 cup mini chocolate chips and chopped nuts.
  • Lightly press mixture into the prepared pan.
  • If desired, sprinkle top with remaining 1/4 cup of mini chocolate chips.
  • Bake for 18 to 22 minutes or until golden brown.
  • Let cool for 10 minutes then cut into bars.
  • Let bars cool completely in pan before removing or serving.
  • Store leftovers in a covered container.
