- 4 ½ cups rolled oats
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- ⅔ cup coconut oil melted, then, cooled
- ¾ cup honey
- ⅓ cup packed brown sugar
- 1 egg white
- ½ cup chopped mixed nuts or whatever kind you prefer
- 1 ¼ cups mini chocolate chips divided ( or your favorite dried fruit or baking chips)
Preheat oven to 325 degrees. Line a 9 x 13 baking dish with foil. Lightly spray foil with non stick cooking spray.
In a large mixing bowl combine the oats, flour, brown sugar and baking soda.
Pour in honey, coconut oil, egg white and vanilla and coat oat mixture completely. Stir in 1 cup mini chocolate chips and chopped nuts.
Lightly press mixture into the prepared pan.
If desired, sprinkle top with remaining 1/4 cup of mini chocolate chips.
Bake for 18 to 22 minutes or until golden brown.
Let cool for 10 minutes then cut into bars.
Let bars cool completely in pan before removing or serving.
Store leftovers in a covered container.
