Banana Snack Cake with Banana-Cream Cheese Frosting

FOR CAKE:
- 2 cups flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 cup sugar
- 2 eggs
- ¼ cup canola oil
- 2-3 ripe bananas smashed
- 1 cup whole milk
- 2 teaspoons vanilla
FOR FROSTING:
- 1 ripe banana cut into pieces
- 4 tablespoons butter softened
- 8 ounces cream cheese softened
- 1 teaspoon vanilla
- 3 cups powdered sugar
FOR CAKE:
Preheat oven to 375 degrees. Grease a 9 x 13 baking dish.
In a bowl, whisk together flour, baking soda and salt. Set aside.
In a mixing bowl, beat eggs and sugar. Add in oil, milk, vanilla and bananas. Mix well.
Gradually add in flour mixture and mix until well combined.
Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted comes out clean.
FOR FROSTING:
In a saucepan, cook down banana until it becomes thicken ( about 5 minutes) Let is cool completely.
In a mixing bowl, beat cream cheese,butter and vanilla until creamy. Add in cooled banana.
Gradually add in powdered sugar until fluffy. If desired, add in more powdered sugar to get desired consistency.
