Preheat oven to 375 degrees. Grease a 8 x 8 in baking dish.
In a mixing bowl, combine sugar cookie mix, egg and melted butter. Mix until dough forms.
Remove 1 cup of dough and set aside. Take remainder of dough and press evenly into bottom of pan.
Spread apple pie filling over sugar cookie dough.
Take the remaining 1 cup of dough and break up into small pieces.Sprinkle on top of apple pie filling.
In a small bowl, combine brown sugar and ground cinnamon. Sprinkle on top of dough.
Bake for 20-25 minutes or until edges are brown and dough is cooked through.
If desired, drizzle with caramel sauce before serving.
Notes
This recipe calls for a 21 oz can of apple pie filling. It will work fine, but, if desired, you can use a bit less. I used about 3/4 of the can and it was more than enough.
