Ingredients
  

  • 1 cup sour cream
  • 2 (10.5 ounce) cans condensed cream of chicken soup
  • 2 teaspoons poppy seeds
  • 5 cups cooked shredded chicken equivalent to meat from 1 large or 2 smaller rotisserie chickens
  • ½ cup slivered almonds (about 2 ounces)
  • 2 sleeves Ritz crackers coarsely crushed (about 60 crackers total)
  • 12 tablespoons butter melted (1 ½ stick)
  • chopped fresh parsley

Instructions
 

  • Preheat the oven to 350°F. Whisk together sour cream, chicken soup, and poppy seeds in a large bowl. Stir in chicken and slivered almonds.
  • Place the chicken mixture in a greased 9 x 13-inch baking dish.
  • Combine the Ritz crackers and melted butter in a small bowl.
  • Top the casserole with the buttered cracker crumbs.
  • Bake your casserole uncovered for about 20-25 minutes, or until the filling is hot and bubbly.
  • Garnish your Pioneer Woman Poppy Seed Chicken Casserole with fresh parsley and serve.

Notes

  • Cooking for a smaller family? All ingredients should be cut in half, and the casserole should be baked in an 8-inch square dish. The rest of the cooking directions remain the same.
  • Prepare two 8-inch square baking dishes with the casserole ingredients. Bake one now and freeze the other.
  • Use store-bought rotisserie chickens (or two) for easy, quick preparation. Rotisserie chicken also adds a lot of flavor to the dish.
  • For the best flavor and texture, use full-fat sour cream.
  • The casserole should be baked until it is heated. The ingredients are already cooked, so you only need to warm them in the oven until bubbly. It may dry out or become burnt if you bake it too long.
