This Overnight Breakfast Casserole from Pioneer Woman is packed with sausage, bacon, cheese, and potatoes, perfect for holidays! Make the night before and bake the next morning.

Ingredients
  

  • 1 pound bulk breakfast sausage
  • 8 slices bacon diced
  • 10 eggs
  • 1 ½ cups milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon coarse ground pepper
  • 20 ounces shredded potatoes hash browns thawed
  • 8 ounces cheddar cheese grated and divided
  • ¼ cup green onions sliced (optional)

Instructions
 

  • You should first grease a large (9×13) baking dish with butter, oil, or cooking spray, and heat a skillet over medium heat.
  • Cook the sausage until fully cooked, breaking it up into small pieces as you go.
  • Next, you want to remove the sausage and drain the grease, then go ahead and cook the bacon until crisp.
  • Add the eggs, milk, mustard, salt, and pepper to a large bowl and whisk until well combined.
  • With a wooden spoon, combine the thawed shredded potatoes, half of the cheese, the cooked sausage, and half of the bacon (keep the other half for serving).
  • Add everything to the greased baking dish.
  • Wrap in foil or plastic wrap and refrigerate overnight.
  • Now you want to preheat your oven to 350 degrees F.
  • Remove the wrapping or cover from the dish add the remaining cheese to the top.
  • Cook your Pioneer Woman Overnight Breakfast Casserole for 45-60 minutes until the center is set and not jiggly.
  • Next, remove the casserole from the oven and allow it to cool slightly before serving.
  • Sprinkle with remaining bacon crumbles and green onions and serve.

Notes

  • Use dry mustard powder if you don’t have Dijon mustard, or leave it out altogether.
  • It is possible to use all bacon, all ham, or all sausage. Or you can even use a combination of all of them!
  • For some extra flavor, add some chopped bell peppers (red is my favorite, but yellow and green can also work). Cook the peppers first (with the bacon or sausage will work too).
  • A can of green chilis or a chopped jalapeno would be perfect if you prefer a southwestern flair (and who doesn’t?).
