Jamie Oliver’s Oven-Roasted Halibut makes eating healthfully simple. This simple Oven Roasted Halibut recipe from Jamie Oliver is ready in only 25 minutes and makes a wonderful midweek meal when served with a green salad or roasted vegetables.
In a 9x13-inch casserole dish, whisk together all the ingredients.
Place the halibut fillet in the casserole dish, then flip it over so that both sides get marinade.
If you like, you can cut the halibut into smaller pieces and put them in the fridge covered with plastic wrap for 30 minutes to 2 hours to marinate.
Set your oven’s temperature to 350 degrees F. Take the plastic wrap off the casserole dish and put it in the oven.
Bake it for 20 minutes, or until it’s done.
Serve your Roasted Halibut right away. If you like, you can top it with chopped parsley or tomatoes.

It's important to have fillets that are all roughly the same size so they cook evenly and don't dry out.
In the same vein as other fish, halibut is better when cooked just a little underdone rather than over. Since halibut lacks oil, it dries out more rapidly than other fish.
