Ingredients
  

  • 1 (12 ounce) jar of roasted red peppers drained
  • 4 small plum tomatoes
  • 1 cup raw almonds
  • ¼ cup fresh flat-leaf parsley
  • ¼ cup olive oil
  • 1 teaspoon salt more to taste
  • 2 cloves garlic
  • juice of half a lemon

Instructions
 

  • Blend the ingredients until the texture is to your liking (I prefer it between chunky and smooth; I leave some texture with the almonds, but it’s largely a smooth emulsion).
  • Serve hot or cold with grilled chicken and veggies, crispy potatoes, eggs, and so forth.

Notes

  • Use high-quality ingredients. Make sure the sauce is made using the highest quality components possible.
  • Prepare your own roasted peppers. If you’re looking to take things up a level, roasting your own red peppers is a great option. You will need 2 fresh red peppers to create romesco.
  • Put a little spice in at first and gradually add more. If you are concerned that this sauce may be excessively spicy, try it with less (or no) paprika or red pepper flakes. There’s always room for expansion!
