Ingredients
  

  • 1 (12 ounces) precooked Italian chicken or turkey sausage package sliced into 1/2-inch rounds
  • 1 medium red bell pepper cut into quarter-inch strips
  • 1 medium yellow bell pepper cut into quarter-inch strips
  • 1 small yellow onion cut into quarter-inch slices
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red vinegar
  • 2 minced garlic cloves about 2 teaspoons
  • ½ teaspoon Kosher salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes plus more as desired
  • thinly cut fresh basil, chopped fresh parsley, and freshly grated Parmesan cheese optional for garnish

Instructions
 

  • Preheat the oven to 400 degrees F. To make cleaning easier, line a big, rimmed baking sheet with parchment paper.
  • In the center of the pan, place the sausage, peppers, and onions.
  • Season with garlic, salt, basil, oregano, black pepper, and red pepper flakes after drizzling with olive oil and red vinegar. Layer in a single layer after combining.
  • Bake for 25 to 35 minutes, rotating the peppers halfway through, or until they are soft.
  • Remove from the oven and serve immediately.
