Ingredients

  • 2 tablespoons meringue powder
  • 2 teaspoons clear vanilla extract
  • 1 stick Crisco
  • ½ stick unsalted butter
  • ¼ cup water plus 1-2 tablespoons for later
  • 6 cups powdered sugar
  • ½ teaspoon salt

Instructions

  • In a mixing bowl, add both meringue and water then beat until soft peaks form.
  • Continue beating the mixture at low and gradually add sugar, one cup at a time, mixing well after each cup.
  • Add a little extra water in between as needed.
  • Next, you want to add clear vanilla, salt, Crisco, and butter and beat until smooth.
  • And Voila! You just got yourself a homemade Costco icing.

Notes

  • Chocolate: You want to sift 1/2 cup of unsweetened cocoa powder, then mix into the icing base until well combined. After that, add 1 to 2 extra tablespoons of Crisco if needed for a smoother, creamier frosting.
  • Caramel: Go ahead and mix in 1/3 to 1/2 cup of caramel sauce, both homemade or store-bought can work here.
  • Strawberry: Mix the frozen dried strawberry powder into the Costco icing until well combined.
  • Food coloring: It can be added to your homemade Costco icing, if you going to use liquid food coloring, I recommend using just a few drops as it can thin out the Icing.
