1 (16 ounces) bag of frozen Costco Normandy Vegetables
1tablespoonolive oil
salt and pepper
Instructions
Preheat your oven to 450°F. Put a baking sheet in the oven while it heats up.
Mix the frozen Costco Normandy Vegetables with the oil in a mixing bowl. Season with salt, pepper, and any other seasonings you desire.
On the hot baking sheet, arrange the vegetables in a single layer. Roast for 15 minutes, then stir well.
Continue to bake until the edges are golden brown and crisp for another 10-15 minutes. (Roasting larger cuts and sturdier vegetables will take longer than cooking delicate ones. Some vegetables, like green beans, may be done after the first 15 minutes.)
Notes
You don’t need to thaw the vegetables first. Just cook them straight from the freezer.
Make sure the pan is preheated before cooking. Hot pans help crisp up frozen Costco Normandy Vegetables quickly by allowing them to cook faster. Roasting from frozen keeps their body and texture. For the best results, do not cook frozen vegetables below 450F.
During the transfer of the vegetables to the hot pan, you may hear some sizzling and see some grease splatter. Avoid leaning over the hot sheet pan and use oven mitts.
Do not line the pan with parchment paper or aluminum foil. To achieve optimal browning, you want the hot pan to vegetable contact.
When choosing frozen vegetables, choose ones that are similar in size or of the same kind.
You can add additional seasonings, along with salt and pepper, if you like, such as minced garlic or garlic powder, onion powder, smoked paprika, or any herb you think might enhance the taste.
Coat in oil. Although they are frozen, use as much olive oil or avocado oil as you can to crisp them up. Make sure you use more than you would for fresh vegetables.
Be careful not to overcrowd the pan. As they have a lot of moisture, they will release more moisture, so you should keep space between the vegetables.
