2 ribeye steaks about 1 inch thick salt and pepper olive oil 3 garlic cloves smashed 3 sprigs of thyme 3 sprigs of rosemary 3 tablespoons butter at room temperature
Preheat your oven to 400°F.
On both sides, sprinkle the steaks with a lot of salt and pepper.
On high heat, warm up a big cast-iron pan. When the pan is hot, add a little olive oil and swirl it around to cover the bottom.
Start cooking the steaks in the pan. Turn them over three or four times, and cook until they are browned and toasted.
Put the garlic, thyme, and rosemary in the pan. Use a spoon to coat the steaks with the melted butter.
Put the pan in an oven that has already been heated and cook the steaks for 5 to 7 minutes, or until they are done the way you like them.
Take the pan out of the oven and let the steaks rest for 5 minutes. Then serve them.
To make herb butter, put the room-temperature butter and chopped herbs in a small bowl and mix them together.
To serve, cut the steaks across the grain and put a dollop of herb butter on top of each piece. Enjoy!
Keep the steak at 1-inch thickness for even cooking.
Use high smoke point oil to prevent burning flavors.
Season generously with salt and pepper before searing.
Let the steak rest after cooking for juiciness.
Adjust oven time for preferred doneness; use a meat thermometer for accuracy.
