2 tablespoons butter for sautéing 2 shallots finely chopped 2 cloves garlic finely chopped 1 tablespoon all-purpose flour for thickening 1 cup Madeira wine 1 cup beef stock 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme 1-2 bay leaves Salt and freshly ground black pepper to taste
Sauté finely chopped shallots and garlic in butter until soft.
Add flour and cook until golden brown.
Pour in Madeira wine and reduce by half.
Add beef stock, thyme, and bay leaves.
Simmer until the sauce thickens.
Season with salt and pepper to taste.
