Ingredients
  

  • 1 teaspoon olive oil
  • 1 tablespoon minced shallots
  • 2 tablespoons green peppercorns packed in brine
  • 2 tablespoons butter divided
  • 2 tablespoons brandy preferably Cognac
  • 2 teaspoons all-purpose flour
  • 1 cup beef broth preferably homemade
  • ½ cup heavy cream
  • salt to taste

Instructions
 

  • Set the pan on medium heat and add the oil. Add the shallots, green peppercorns, and 1 tablespoon of the butter. Cook, stirring every now and then, for about 3 minutes, or until the shallots are soft.
  • Take it off the heat, add the brandy, and then put it back on the heat. Turn off the heat and let it sit for about one minute.
  • Stir the flour in and cook for about one minute, until it is fully absorbed. Turn up the heat to medium-high and add the beef broth. Stir the sauce all the time as it simmers for 3 to 5 minutes, or until it has cut in half.
  • Turn the heat down to medium-low and add the cream. It will take about 5 minutes of simmering for the sauce to get thick.
  • Add the last tablespoon of butter and mix it in to make it smooth. Add salt.
