Ingredients
  

  • 3 tablespoons butter divided
  • 2 large eggs whisked
  • 2 medium carrots peeled and diced
  • 1 small white onion diced
  • ½ cup frozen peas
  • 3 cloves garlic minced
  • salt and black pepper
  • 4 cups cooked and chilled rice I prefer short-grain white rice
  • 3 green onions thinly sliced
  • 3 tablespoons soy sauce or more to taste
  • 2 teaspoons oyster sauce optional
  • ½ teaspoons toasted sesame oil

Instructions
 

  • Melt 1/2 tablespoon of butter in a large sauté pan over medium-high heat.
  • Cook the scrambled egg until done, then transfer it to a plate.
  • Add an additional 1 tablespoon of butter to the pan and let it melt.
  • Sauté carrots, onion, peas, and garlic with a generous pinch of salt and pepper until the vegetables are soft.
  • Increase the heat to high, add the remaining 1 1/2 tablespoons of butter, and stir until melted.
  • Quickly introduce the rice, green onions, soy sauce, and oyster sauce (if using).
  • Sauté for an additional 3 minutes, allowing the rice to crisp up between stirs.
  • Add the scrambled egg back into the pan, stir to combine, and then remove from heat.
  • Incorporate sesame oil and ensure it’s well mixed.
  • Taste the dish and adjust the seasoning with extra soy sauce if needed.

Notes

  • Crispy Rice: Let the rice sit between stirs to allow it to crisp up at the bottom for added texture.
  • Quick Stir-Fry: The final stir-fry after adding the eggs should be quick to avoid overcooking and maintain the desired consistency.
  • Sesame Oil Finale: Incorporate sesame oil at the end for a burst of rich, nutty flavor. A little goes a long way.
