Ingredients
  

  • 1 pound cauliflower florets
  • 1 pound dried macaroni
  • 2 ounces butter plus a few extra knobs
  • 4 tablespoons plain flour
  • 2 teaspoons English mustard powder
  • 2 ½ cups whole milk
  • 1 pinch cayenne pepper
  • sea salt to taste
  • 4 ounces mature Cheddar cheese grated
  • 4 ounces Lancashire cheese crumbled
  • 4 ounces Cheshire cheese crumbled
  • 3 tablespoons fresh white breadcrumbs
  • 1 tablespoon thyme leaves

Instructions
 

  • Boil salted water, cook cauliflower for 4-5 minutes, then cool in ice water.
  • Cook macaroni until al dente, drain, and mix with cauliflower and butter.
  • Preheat the oven to 400 °F/gas 6.
  • Make a roux with butter, flour, and mustard powder, then add milk to make a smooth sauce. Season with cayenne pepper and salt.
  • Add three cheeses (leave some for the top) to the sauce, and mix with macaroni and cauliflower.
  • Spread the mixture in a gratin dish.
  • Combine the remaining cheese, breadcrumbs, and thyme, and sprinkle on top.
  • Bake for 15-20 minutes until golden. Serve.

  • Use fresh cauliflower florets instead of frozen ones to maintain the desired texture in the Creamy Mac and Cheese.
  • Stick to the recommended cheese blend of Cheddar, Lancashire, and Cheshire for the perfect balance of flavors.
