8 thin slices of ham 8 ounces Swiss cheese sliced or shredded 4 boneless skinless chicken breasts about 2 pounds salt and pepper to taste 3 cups cornflake cereal crushed, or substitute breadcrumbs 6 tablespoons butter melted For the sauce: 1 cup mayonnaise 1-2 teaspoons yellow mustard to taste
Pat the chicken dry and cut each breast in half horizontally. Flatten with a mallet between plastic wrap to create thin, even pieces.
Top each piece with ham and shredded cheese. Roll tightly, tuck sides, and wrap in plastic. Refrigerate for 30 minutes.
Set the oven to 400°F. Unwrap chicken, and season with salt and pepper.
Dip chicken in melted butter, then cornflake crumbs, pressing lightly. Place on a greased baking sheet.
Bake in the preheated oven for about 30 minutes, or until chicken reaches 160°F.
