  • 8 tablespoons unsalted butter
  • 1 pound uncooked lobster meat

Instructions
 

  • Put the wine and butter in a small pot and cook them together on low.
  • Add the lobster meat to the melted butter and simmer for 4 to 5 minutes on low heat.
  • Too rapid cooking causes the release of pellicle, a white protein material that is edible but unappealing on lobster.
  • Cook for another 4 to 5 minutes, or until the meat is white and firm but not overcooked, after which you should flip the lobster over.
  • Season with cracked pepper and sea salt, but don’t forget to taste it first.
