This Cowboy Caviar recipe from Pioneer Woman is very fresh, healthy, simple, and loaded with flavor. It’s a lot of fun to prepare and is an excellent appetizer for potlucks or parties.
1(15 ounce) can black beanswell rinsed and drained
½bunch of cilantroabout 1/2 cup chopped
3tablespoonslime juiceor more to taste
½cuplight Italian dressing
4medium garlic clovespressed
1teaspoonsea salt or to taste
Instructions
Combine diced tomatoes, chopped onion, bell pepper, seeds, and diced jalapenos, sliced avocados, drained corn, rinsed and drained black beans, and chopped cilantro in a large bowl.
Then, add pressed garlic cloves and sea salt to taste.
Stir in lime juice and Italian dressing.
Mix everything together and serve with tortilla chips.
Notes
This dish can be made up to 8 hours in advance. If you are making it in advance, leave out the avocado, and stir it in just before serving.
You can substitute other types of beans instead of black beans; I’ve used pinto beans before and they were delicious.
Sliced green onions would be a good substitution for cilantro if you’re not a fan.
Corn kernels are usually frozen-thawed, but canned corn or fresh corn on the cob can also be used.
You can serve Pioneer Woman Cowboy Caviar as a dip with tortilla chips or as a salad over lettuce leaves.
