Sauté finely chopped onions, garlic, carrots, and bell peppers in a pan. Once softened, set them aside.
In a large mixing bowl, combine the sautéed vegetables, ground beef, ground pork, eggs, milk (or beef broth), parsley, thyme, sugar, salt, pepper, and paprika. Mix well until everything is fully incorporated.
Shape the mixture into a loaf. Coat the outside evenly with bread crumbs.
Place the meatloaf into a loaf pan (or shape it freeform on a greased baking sheet).
Bake the meatloaf at 350°F for 60–75 minutes, or until an instant-read thermometer registers 160°F (71°C) in the center.
Remove the meatloaf from the oven and allow it to rest for at least 10 minutes before slicing.
Gravy Instructions
To make the gravy, sauté all of the vegetables in the butter over medium heat.
In a small bowl, mix 1 cup of beef broth with 1 cup of flour until smooth.
Slowly pour the broth mixture into the pan, stirring constantly to avoid lumps.
Cook for 2–3 minutes, or until the sauce thickens. Season with salt and pepper to taste. Serve over sliced meatloaf.
