Ingredients

  • 2 pounds frozen diced potatoes
  • 1 cup sour cream You can use reduced-fat or just regular sour cream.
  • 1 can cream of chicken soup 10.5 ounces
  • 1 teaspoon garlic salt
  • 2 cups cheddar jack cheese shredded

Instructions

  • Coat the slow cooker with cooking spray (this is optional, but I like to do it.)
  • Put frozen potatoes in a slow cooker.
  • Stir together the sour cream, cream of chicken soup, and garlic salt in a bowl. Pour the liquid mixture over the potatoes.
  • Add cheese to the crockpot and stir everything together.
  • Cook, covered, on high for 4 hours or on low for 6-8 hours. Turn the crockpot to the warm setting to keep potatoes warm until you’re ready to serve them.

Notes

  • If you want to double this Pioneer Woman Crockpot Cheesy recipe, just double all ingredients – your crockpot will be quite full, but it will still work. Also, add an hour of cooking time!
  • If gluten-free: be sure to use a gluten-free cream of chicken soup.
  • Crockpots/slow cookers vary – check yours after 3 hrs for doneness.
  • Potatoes are good for breakfast, lunch, and dinner. That’s why these Pioneer Woman Crockpot Cheesy Potatoes make it so easy to turn a side dish into an anytime meal
  • Before serving, garnish with chopped green onion, a handful of finely chopped parsley, or other fresh herbs.
