What Are Ranger Cookies?

Cookie history dates back to the early 20th century. According to some claims, these cookies originated in Texas and were originally known as ‘Texas Ranger Cookies’ or ‘The Lone Ranger Cookie’. The pioneer woman recipe for Ranger cookies is similar to the recipe for Cowboy Cookies. Besides oats, Rice Krispies, coconut, brown sugar, and loads of chocolate chips, they have coconut in them as well.

Which is best to use in Pioneer Woman Ranger Cookies shortening or butter?

You can make taller, softer cookies by adding shortening. You can make flatter, crispier cookies by using butter. If you use both butter and shortening, you will get the best results, but in this recipe, we use butter for crisp taste.

Can I use quick oats in Pioneer Woman Ranger Cookies?

In these pioneer woman ranger cookies, you’ll want to use old-fashioned oats. The texture of quick oats is different because they are ground.

Ingredients That You’ll Need:

  • Butter: I prefer unsalted butter at room temperature.
  • Brown Sugar: Light brown sugar that is packed.
  • Sugar: White sugar, granulated.
  • Vanilla Extract: I know vanilla is expensive right now, but real vanilla extract is worth the investment. Avoid imitations. Sam’s Club or Costco are my favorite places to buy it in bulk.
  • Salt
  • Eggs
  • Flour: These cookies have only been tested with white all-purpose flour.
  • Baking Powder: For rising.
  • Baking Soda: An additional leavening agent.
  • Rolled Oats: These cookies were made with Quaker Oats Miller’s Batch oatmeal, which is a thick-cut, organic rolled oat that is hearty and delicious for cookies. However, if you can’t find those, regular old-fashioned oats will work fine, just avoid quick oats since they have a different texture.
  • Chocolate chips: my favorite are Ghirardelli baking chips.
  • Rice Krispies: whatever store brand you use for crispy rice cereal.

Substitutions & Variations:

  • Corn flakes instead of rice crispies cereal? Just use crushed cornflakes like in Cowboy Cookies!
  • Swap add-ins: You can choose a different type of chocolate chip or nut. As an alternative to milk chocolate, you can use white, dark, or butterscotch chips. You can also substitute crushed walnuts or pecans for peanuts.
  • You can leave out the coconut if you’re not a fan.
