Despite its (slightly) creepy name, this Pioneer Woman Frog Eye Salad is an amazing pasta salad. It is sweet and can pass as a dessert, but in Utah, we prefer to call it a side salad to allow room for 7 Layer Bars, Carmelitas, and Lemon Bars.

Ingredients That You’ll Need:

  • Acini de Pepe: This small round pasta is related to pepper seeds. You may have tried it before in wedding soup. If needed, another small pasta like orzo, stars, or alphabets can be substituted for the same texture.
  • Cool Whip: If desired, you can use fresh whipped cream.
  • Fruit Juices: Use freshly squeezed for best results. It will have a better flavor and less acidity.
  • Marshmallows: You can use rainbows if you want to add some color.
  • Sugar: If you’re trying to make this a healthier treat, consider omitting some of the sugar (the dish will be less sweet). To make it even healthier, use a light cool whip or a sugar substitute for sweetness.

How do you make acini di pepe pasta?
