Call them brownies. Call them blondies. Call them bars or squares.
Call them whatever you want! Just make them, because, they are simple, delicious and bursting with lots of lemon flavor. Spring baking alert!

What Ingredients are Needed?
- Flour + Baking Soda + Salt
- Sugar
- Eggs
- Oil
- Plain Greek yogurt
- Lemon Juice + zest
- additional for glaze: powdered sugar

A few recipe notes:
No Greek yogurt? Sour cream can be used as a replacement.
Be sure to line your 8 x 8 pan with foil or parchment paper. If using foil, spray it lightly with cooking spray. Let the paper/foil hang a bit over the edge of your pan. This will make removing the bars in one big piece really simple.
Oil: Use a neutral tasting oil for best results. (ex:canola, sunflower, vegetable)
No need to haul out your electric mixer for these. Mix the batter with a silicone/rubber spatula and use a whisk for the glaze. Easy peasy.

Lemon Brownies

Ingredients
FOR BROWNIES:
- 1 cup flour
- 3/4 cup sugar
- dash of salt
- 1/4 tsp baking soda
- 2 eggs
- 1/4 cup plain Greek yogurt
- 3 TBSP canola oil
- 2 TBSP lemon juice
- zest for 1 lemon
FOR GLAZE:
- 1 cup powdered sugar
- 2-4 TBSP lemon juice
Instructions
- Preheat oven to 350 degrees. Line an 8 x 8 baking pan with parchment paper or foil. If you are using foil, spray it lightly with non stick cooking spray. Leave a bit extra to overhang the pan.
- In a mixing bowl, mix together flour, baking soda,sugar and salt. Then, add in eggs, yogurt oil, lemon juice and zest. Mix fully to combined.
- Spread batter into prepared pan.
- Bake 20 minutes or until toothpick inserted comes out clean. Let the brownies cool for 10-15 minutes, then, remove from pan.
- In a bowl, whisk together glaze ingredients until smooth. Spread on top of brownies and let the glaze set before serving.
