25. Indian Curry Quinoa

  • Mix the quinoa, coconut milk, diced tomatoes (with juice), curry powder, and ketchup or tomato paste in a medium saucepan, and then bring the mixture to a boil. After 15 minutes, turn the heat down to its lowest level, cover the pot, and continue to simmer the quinoa until it is done.
  • In the time it takes the quinoa to cook, heat the oil in a frying pan over medium heat and stir-fry the garlic and onion until the onion becomes translucent.
  • After adding the carrot, continue to cook for a few more minutes.
  • Cook for a further couple of minutes after adding the chickpeas.
  • After adding the spinach or kale, simmer it for approximately a minute, until it has wilted.
  • After mixing the vegetables with the quinoa, seasoning it with salt, pepper, and crushed red chili pepper, and topping it with cilantro, prepare the dish to be served.
