  • 8 medium eggs (we use organic)
  • 2 x 31g packs coriander, stalks finely chopped and leaves roughly chopped (reserve a small handful of chopped leaves for the guacamole)
  • 1-2 green chillies, thinly sliced
For The Guacamole:
  • 2 large ripe avocados
  • 2 tbsp extra-virgin olive oil
  • juice of 1 lime
  • a small handful of chives, chopped
  • 1 garlic clove, crushed

  1. On medium heat, cook the chorizo for 5 minutes in a casserole or sauté pan.
  2. Take out some of the chorizo and add the peppers, onions, and butter. In 8 minutes, the food will be soft.
  3. Warm the oven up to 200°C. Smoked paprika, oregano, cumin, and chili powder should all be added. Keep cooking for a little while longer.
  4. Add the canned tomatoes and season them well. Simmer for 10 minutes until the sauce thickens.

To make guacamole:

  1. Cut up the avocados and add them to a bowl with the red onion, tomatoes, cilantro, salt, and pepper.
  2. Check the tomato sauce’s spice, then add the spinach and cook until it wilts.
