  • 2 tablespoons (30ml) milk
  • 2 tablespoons (30ml) heavy cream
  • 2 tablespoons (35g) corn syrup
  • Tiny pinch kosher salt
  • 2 tablespoons (30ml) bourbon

  1. Put the dates and baking soda in a bowl or measuring cup that can handle heat. Over the dates, pour hot water and press them down with a spoon to cover them. Let it sit for a while. 
  2. On high, cream the butter and sugar in a stand mixer bowl with the paddle attachment (or a big bowl and a hand mixer). Do this for about one minute, or until the mixture is light and fluffy. 
  3. Turn the speed down to medium, add the egg, and keep mixing until everything is well mixed. If necessary, scrape the sides of the bowl. Add the flour and baking powder and mix on low speed until just mixed.
