  • 1 tsp sesame oil
  • 1 pak choi, halved lengthways
  • 1 lime, halved
  • 200g cooked rice noodles
  • ½ carrot, finely sliced into batons
  • 1 spring onion, finely sliced
  • 1 red chilli, finely sliced
  • A few sprigs of coriander
  • 1 tsp black sesame seeds
  • Pinch of chili powder (optional)

  1. Over medium heat, combine all of the broth ingredients in a large saucepan. Simmer, stirring occasionally, for 30 minutes to an hour, or until the liquid is reduced by half. The more time it simmers, the more robust the flavor becomes.
  2. Toss the chicken thighs with the sriracha and let them marinate for around 15 to 20 minutes.
  3. Put the egg in a small saucepan and cover it with cold water. Hold in a medium-low oven. Poke a 6-minute timer once you see bubbles forming in the boiling water.
