🍛 How To Make Gordon Ramsay Pumpkin Risotto

  1. In a small pan, heat the soup. Once it starts to simmer, lower the heat and keep it warm.
  2. In a big pan over medium-low heat, melt the butter and oil together.
  3. Put in the chopped onions and cook for 5 minutes, until they get soft but don’t turn color.
  4. Put in the diced pumpkin and cook for about seven to eight minutes, until it gets soft. The pumpkin will start to break down if you stir it a lot.
  5. After you add the chopped garlic and thyme, cook for about a minute or until the smell is nice.
  6. Put in the rice and stir it around in the oil. Cook for two minutes.
  7. Put in the wine and let it bubble and disappear.
  8. Pour in enough stock to cover the rice, then stir it around.
  9. Since the first cup of soup is being soaked up, keep adding one cup at a time. Stir the food often, especially near the end of the cooking time.
  10. Add the butter and cheese after the rice is done cooking. After that, stir very hard for two minutes.
  11. Add more Parmesan and taste it to see if it needs it.

Yes, you can use chicken stock as a substitute for vegetable stock if you prefer. It will add a different flavor profile to the risotto, but it’s a personal preference.
